Single Best Meal Ever?!
Quick update on Carmen: she woke up with mild fever and is coughing some. She continues to have diarrhea and reduced urine output. We noticed that in the past few weeks Carmen has packed on the pounds. She has always been chubby but I weighed her today and she is up to 33.2 lbs. We are most definitely going to reduce her calories! Maybe these things all go together. The diarrhea, reduced pee, and weight gain. Any ideas what might be going on???
Carmen’s Hospice nurse came by today and, all in all, it appears that Carmen is doing fairly well. Perhaps she will live a good while longer.
I was looking through our pictures and found a picture of Carmen eating her very favorite food, squash. Carmen LOVED squash. I sure wish she could eat squash now.
I need a distraction today so tell me about the single BEST meal you ever ate! I’ll go first. When Dave and I were in England for Dave’s work project, I had a terrible time with the food. I was pregnant and just about everything made me nauseous. Even the water. I could not tolerate mineral water or sparkling water so I would always ask room service or the restaurant staff for tap water. They must have thought I was a weird American! Well, one weekend we drove to Edinburgh, Scotland with a couple of Dave’s coworkers. After walking around doing tourist stuff all day, we stopped at an Italian restaurant. First we had antipasto (marinated vegetables) and I literally almost cried it was so good. And then I had spaghetti and sauce (separated because I could not handle them together!). I think I ooohhhed and aaahhhed over every bite!
Speaking of good food, thank you to Hibst for the amazing buffet of food you brought over yesterday! Salmon, blackened chicken, chicken curry, roasted vegetables, phyllo stuffed with spinach, etc. You are amazing!!!

Hello, you do not know me but I follow your story. You and your entire family are in my prayers. You and your husband are amazing people..definitely an inspiration. Your girls are too cute!
I think it was while my husband and I were dating, and we took a trip down to Key West. We, by luck and not really any recommendations, found a wonderful restaurant on the water. There is a huge terraced patio that faces the water. And as the sunset fell to our right, making everything golden and pink, we had seafood, wine and creme brulee. I can’t remember the seafood much, but the creme brulee was to die for, and the company, the view and the breeze made it perfect!
I can relate to the creme brulee - - we were in a restaurant in Colorado that would have three different creme brulees each day - - - what a treat!
I have to say, though, that I can’t remember any one meal standing out - - I love just about EVERY meal - - especially when I don’t have to cook it!! But, I also love to cook special meals - when it is for my family - - that gives me real pleasure - not what we ate, but eating together as a family!!!
I don’t know if this is truly my best meal, but one of my favorites.
Outside of Bar Harbor, Maine, at a roadside lobster shack - Lobster - corn on the cob - the BEST ever!!!!
One time we were traveling through the Alabama and stopped for gas. They had this little snack bar attached and we decided to get a bite while we were there. It was not very cleanest place I have ever been in but we got a hamburger and I remember that hamburger to this day. It was huge and the tastiest thing I have ever had. Probably from years of grease built up on the grill. We laughed for days about that place.
I agree with NY Grandma, if I don’t have to cook it, I love it.
After being in the hospital with kidney failure for weeks on end, I was finally cleared to leave. My family was all there in Philadelphia visiting so when I was released, we all drove straight to the Spaghetti Warehouse. I did not eat a whole lot, but I enjoyed the company of my family at the conclusion of a very dark time. I can’t recall what I ordered, but I know I loved the desert!
Recently our church did a 21 day Daniel Fast. The fast consisted of mainly fruits, veggies, beans and brown rice (this meant no caffeine, meat, animal products, additives, sugar, bread, basically anything good). So this past Sunday at 6pm our fast was over.
We ate PF Changs Lomein and Crispy Honey Chicken. We also had crab wantons for an appetizer and chocolate chip cookies for dessert. It was truly the best meal I have ever had.
I recently started reading you blog and my heart just goes out to you and your family. Thanks for sharing. Praying for you today.
You know that one of my favorite meals was the peanut chicken at the Thai restaurant with you and Dave. It makes sense that it would be a favorite of mine since it contains coconut. But the very best meal I remember was mother’s chicken and dumplings (she used fresh young chickens that we raised and her dumplings were rolled out very thin), from our garden–purple hull peas, sliced tomatoes, fried potatoes (mother dipped the potatoes in flour so they had a light crunchy coating), iced sweet tea, and for dessert chocolate pie, coconut pie, or butter rolls.
How about some favorite recipes too?!?

Awww, you would always let me feed Carmen squash when I babysat because it was the easiest thing to get her to eat. Somehow we would make a mess anyways, but she did love that stuff! I will always consider it a privilege that I got to feed Carmen a couple of times. Thank God for squash!
And nothing makes me as happy as my mom’s homemade macaroni and cheese. What’s ironic now, though, is that I’ve stolen the recipe from her and prefer it when I make it. That kind of daughter should make a mom proud.
I agree with whoever said any meal they don’t have to fix is their favorite - mine too! Other than that, I had a fabulous meal at a little restaurant in Waynesboro, PA where we lived when we were first married 3 years ago. I think it was salmon and some kind of mango salsa. Delish!
My Bible study met last night and they all asked for an update on Carmen and how you are all doing. Thank you for updating your blog so we can keep praying for you all!

Fried Green Tomatoes is my all-time favorite. Dip them in egg and then flour with salt and pepper. Fry them up in oil and they are amazing!!!
Fonduing is the very best way to eat food. Cook cubes of chicken, steak, little meatballs, shrimp, etc. in Fondue oil! Chicken is delicious in Fondue oil! Dip everything in horseradish sauce….

I’m with everyone who said- if I didn’t have to cook it, it was a good meal. My favorite meal was in Malta (in the crystal blue water off Comino) on a dinky little local boat. It was just a sandwich. Crusty fresh semolina bread sliced thin, rubbed with tomato, salt & pepper, with a few slices of salomi. Freshed squeezed lemonade. Yum-o.

I took my niece to Boston to see our Aunt who was turning 90. We got lost in Saugus and were looking for someplace to eat. So after following all the roads and even seeing a racoon on a 3 story house, trying to get down, we came across this seafood restaurant and went in. We both had 2 lobsters for $30.00 each. It tasted so good and was so much fun to be together. I laughed so hard watching my niece with butter running down her arms enjoying this wonderful meal. Incidentally, I took my husband there a year later and had the same thing. Didn’t taste the same! It had to be Carrie that made it taste good!
I was a sophomore at LeTourneau University. I didn’t have a car and all the nice restaurants were on the other side of town. I offered to wash my friend’s car and pickup Burger King or Taco Bell on the way home in return for the use of his car.
I don’t remember the food at all. But I do remember the restaurant (Applebee’s) and the most beautiful girl in the world, who was sitting across the table from me.
It was our first date.

I hate to say this but the best meal I ever have is my own london broil on the grill with melted butter. I know that Wes remembers this meal. Mashed potatoes and veggies. Sometimes with garlic bread. YUMMMMM! Oh, I read Grace’s comment and WE ALL LOVE OUR FOOD AND IT SHOWS!!!! LOL!
I don’t think I know what could be causing Sweet Carmen’s recent difficulties, but, she is in my heart and prayers - as are the rest of you!
