I make pancakes for the girls just about every week. For years I’ve been making them in a non-stick skillet, one at a time. I spotted a double burner cast iron griddle on Amazon and decided to give it a try.
I LOVE it.
I made a triple batch of buttermilk pancakes (some with blueberries and some with chocolate chips) last week and it took me a fraction of the time I usually set aside for pancake making. Plus, I didn’t burn a single one. The cast iron evenly distributes the heat much better than my old nonstick.

Not sure what all my girls will remember from their childhoods but pancakes will most certainly be on the list!

Yummy! Those really look good. That reminds me of a story in Richard Foster’s book on simplicity. He said every year his family spent a week on a lake and he made pancakes for his children every day of that week. He said he never saw his children keeping pancakes for the next day. They knew he would supply plenty for the next day and the next. Mr. Foster compared this to us holding on to things because we don’t trust God to supply all our needs in the future. I loved that story and have thought of it many times over the years.
I just made waffles, eggs, and bacon for dinner tonight. Usually we have pancakes but a certain husband and son ganged up on the cook
I have an electric griddle but there is something super yummy about the way the pancakes on yours look.
I’m sure the girls will have lots of great memories from childhood but maybe pancakes will be the thing that they make that reminds them of you.
I have an ancient cast iron skillet that I inherited from my Grandma. I use just a little bit of oil to start the first pancakes, and it seasons it so I don’t have to use more, unless I’m making a big batch.
Cast iron is good for you too – the natural iron is added to your diet!
It’s also easy to clean. Some people don’t think soap should be used on them, but I use it on mine. I rinse it well and then heat it on the stove to dry it completely so it doesn’t rust. I read recently that to thoroughly clean a cast iron skillet – sometimes they develop a build-up of debris – place it into a campfire and let it “cook” in there for a period of time. Just a little cast iron trivia.

We love doing pancakes here! I bought a griddle 2 years ago and I love it! It is so much easier. When we moved and had most of our stuff in storage for a year I missed it so much. I was so happy to move into our new house and be able to quickly do pancakes again.
