My mom is here visiting for two weeks. She is sabotaging my attempt to lose the baby weight by making my favorite foods. She made dark chocolate no bake cookies. I have no will power. I love these. They are my very favorite. Thanks Mom!

Dark Chocolate No Bake Cookies
- 2 cups sugar
- 1/3 cup dark chocolate cocoa powder
- 1/4 tsp. salt
- 1 stick butter
- 1/2 cup milk
- 1/2 cup peanut butter (We used soynut butter because Lauren is allergic to peanuts.)
- 1 tsp. vanilla
- 3 cups oatmeal
- Waxed paper
In a heavy saucepan bring to a boil, the sugar, cocoa, salt, butter and milk. Let boil until soft ball stage then add peanut butter. Stir until melted. Add the vanilla and oatmeal. On a sheet of waxed paper, drop mixture by tablespoons, until cooled and hardened.
My mom said that these are a little tricky. It is hard to cook them for the right amount of time. Too short and they won’t harden; too long and they get grainy. So, it might take a bit of practice. However, you can certainly eat them with a spoon if they don’t harden up right!
ETA: My mom said to take a cup of very cold water and drop a small amount of the boiling chocolate mixture into the water. If you can pull it together with your fingers on the bottom of the cup into a very soft ball, then it is ready.
Oh wow! They look delicious. And they’re egg-free too. We could make those for Joshua (also with soynut butter!)

It’s been a while since I checked the blog, so I enjoyed reading up on your first few months with Hope. So glad that Charlotte can finally see her in person. I hope the rest of the visit is wonderful. I’m still working on starting a pattern business here in Oklahoma, but I do hope to take time out next month to attend Molly’s graduation from Texas Tech. She’ll be finishing up her master’s degree in speech pathology and will be looking for a job this summer, maybe in Ft. Worth. I hope that you and Dave figure out what to do about your housing situation. It would be so neat to have you closer to Texas, but with all the friends you’ve made in your current location, a move like that right now would require so much adjustment, especially for Lauren. I know the Lord will continue to lead you as you look to Him.

These were my absolute favorite cookies growing up! I haven’t made them because Jackson is allergic to peanuts. We eat almond butter but have never tried soy nut butter. Where do you get it. I would love to make these again but I don’t think they would be good with almond butter. My mouth is watering just thinking about them! Yum!
Hi Tara, we get soynut butter at Whole Foods. Trader Joe’s used to carry it but discontinued. Our local grocery store also has it in the peanut butter section but it is more expensive than Whole Foods.
I could not tell any difference with using the soynut butter rather than peanut butter.
