The New Tattoo

Couple of funnies from Lauren:

Recently Dave and I were discussing a new Andy Stanley sermon series. Lauren was playing near us and all of a sudden asked, “Andy Stanley is a prophet, right?”

One of the Make-A-Wish volunteers gave Lauren a Barbie lamp. It has a ballerina Barbie that spins around and several different light settings. Lauren set it up next to her bed and is very proud of it. One night, Lauren’s babysitter was putting her to bed and asked who gave her the lamp. Lauren said, “I am not sure, but I think his name is Make-A-Wish!”

I wish I could say that I got a tattoo but it was Lauren! She and Dave went to our neighborhood’s annual picnic and one of the activities was face (or arm) painting.

Russian Potato Salad…Yum, Yum!

Last week a friend of mine came over to show me how to make her Russian Potato Salad. Sometimes you just need the expert to give you an in-person lesson! Thanks Tatiana!

We didn’t use any measurements but I googled Russian Potato Salad and came up with some measurments. However, you can adjust the amount of every ingredient to taste.

Russian Potato Salad
6 potatoes, peeled, boiled and chopped
6 eggs, hardboiled, peeled and chopped
6 dill pickles, chopped (we used a bunch of petite dill pickles)
Chicken thighs, boiled and chopped into bite-size pieces
1 (14 oz.) can peas, drained
3 large carrots, peeled, boiled and chopped (we used a bunch of baby carrots so we didn’t have to peel)
Fresh dill, chopped (Maybe 1/2 of a bunch?)
Mayonnaise
Salt and Pepper to taste

We added corn and next time I will add onion. You can go light on the mayo or heavy. I think you can go fairly light on the mayo because of the moist dark chicken meat, peas and corn. Much less mayo than a regular potato salad or chicken salad. You want everything chopped up really small. This is delicious!

Long/Tall Carmen

When we brought Carmen home from Guatemala she was 5.5 months old and downing a whopping 50 ounces of fluid per day, 42 ounces of formula and 8 ounces of water. The foster mom said that Carmen needed the extra water to “slim down.” Carmen’s pediatrician laughed when he first saw our very round baby and suggested we cut out two of her formula feedings.

Fast forward to today and Carmen is still quite hearty! She is 36 inches long and 38 lbs at 2 years old. We have cut her calories several times to slow down her weight gain but she keeps hitting the top of the growth charts. (She now gets 475 calories per day.) If not for Tay Sachs, I think Carmen would have been a very tall and sturdy grown-up! (Which is so interesting considering that her birth mom is a petite 4’10″ and birth dad is 5’0″.)
