Yesterday was 97 degrees. The car thermometer said 102 in the sun. I am not a fan of heat. I feel like I am suffocating. Thankfully, the weather will be back to 60s and low 70s in a few days. I can handle that kind of weather! Hopefully we can get the kids out to enjoy the beautiful weather before the summer heat stays for good.
Summer is my least favorite season but I do love, love, love summer fruits and vegetables. I absolutely love buying fruits and veggies at farmers’ markets. One of my favorite things in the whole world is a perfectly ripe tomato, straight from a garden.
The grocery store had vine-ripened tomatoes on sale for $0.99 per pound so I bought a bunch. They aren’t straight from the garden tomatoes but they are pretty good in a tomato salad or on a tomato sandwich.
I have been practicing taking pictures and have found that food sits still and doesn’t have to be bribed for a picture!
Dave commented that I am turning our blog into a food blog but I promise I am not!
Tomato Salad
Chopped tomatoes
Black beans
Corn
Diced onion
Chopped cilantro
Lime juice
Balsamic vinegar
(I added a splash of red wine vinegar too.)
Eat as a side dish or with tortilla chips!

Your photos are gorgeous!! I love this “salsa”! Since we have been in Texas for the last few months we have been experimenting with local flavors…this one is a hit for me! They call it Texas caviar down here!!! I just call it good!

Our 5 kinds of tomatoes and 4 kinds of peppers are full of blossoms. God has kept the temperature and rainfall just like the peach trees and the garden like! No 97 degrees so far, that would kill the 9 heads of cabbage and long row of lettuce/onions and peas
( East Texas cream peas). The birds did eat the strawberries. Granddad is going to have to put up a sign telling the birds that they need to leave some to share with him.
Lauren, are you and Daddy/Mommy reading the Little Visits With God book? We need to know when you are ready for The Boxcar Children. It is a long fun collection of stories about the 2 sisters and 2brothers that live in a train car (Granddad told you when he talked to you before Easter).
